Chad Adams, judge, offers what appears to be a sure winner of a cookie. I intend to try them soon. Gobs along with Cornbread Salad from Freestone County will appear on our supper table this coming week. I know I can depend on Sheriff Ralph Billings’ yummy salad recipe.
Taco Soup, Rotel, Fruit Filled Tortillas, Hummingbird Cake, and Banana Bread all use ingredients found in most pantries. Tom Green County’s DPS Randy Swick offers Swick’s Love Muffins, muffins having chocolate chips as an ingredient are sure to be just that. Law Judge Al Gerson Jefferson County and his recipes for Braised Doves, Chicken Pork Jambalaya, Italian Batter Friend shark bites and Quailgerson indicate a man who likes to cook, likes to eat or perhaps likes to do both. Bean Dip, Crawfish and Rice, Pretzel Salad, Jailhouse Rolls, Chicken N Rice, Lasagna, I’m getting hungry. Chocolate For Heart Health - Fact or Fallacy?
Wouldn’t it be wonderful if chocolate and heart health went hand in hand. However, there is so much information lately about the health benefits of chocolate that it is only natural that people get a little confused.
It is true, that if people only ate pure cocoa, then there might be heart health benefits. The problem is that most people eat unhealthy processed chocolate bars containing sugar, corn syrup, hydrogenated oils, dairy cream not to mention other “baddies” contained in some of those tasty fillings. That said, you might be surprised to find out that chocolate isn’t all that bad. The fat content in chocolate, contained in premium grade dark chocolate, is comprised of equal amounts of oleic acid (a heart-healthy monounsaturated fat also found in olive oil), stearic and palmitic acids. Stearic and palmitic acids are forms of saturated fat – not so good. Saturated fats are linked to increases in LDL-cholesterol and risk of developing heart disease.
The Four Regions of Chinese Cuisine
The world of Chinese food consists of more variety than most Americans realize. There are many different types of food in China that can be categorized roughly by four regions: Southern, Northern, Eastern and Western. Some information about each:
Southern, or Cantonese - The cuisine from this area is perhaps the most well known to Americans. Cantonese cuisine uses a large variety of vegetables and meats. Rice is the staple, and the familiar Fried Rice recipes are Cantonese in origin. Many of the dishes of this area are prepared very quickly by stir-frying. Usually Cantonese cuisine is lightly flavored, but there are a large variety of tastes used. Sweet and sour dishes originated in this region.
Northern, or Beijing - Also known as Mandarin cuisine, this type of food originated in the area of China that has very sever winters. The climate of this region does not allow for the growing of rice, so wheat is the staple. Wheat is made into noodles, pancakes and dumplings. The flavors of Northern China are more robust, with plenty of onion, garlic, cabbage, bean pastes, dark soy sauce and oyster flavored sauce. With influences from Mongolian and Muslim invaders in the past, Northern cuisine is hearty fare. Beijing (Peking) Duck, Mongolian Hot Pot and Mongolian Beef are some of the more familiar types of this cuisine.
